Open a track in
GPS Track Editor (File | Open track...)

If necessary, restructure the track,
break or merge some segments.

In the Tracks list, select the required track segments or folders:
click them one-by-one while holding the Ctrl key.

Choose File | Save selected items as...

Specify a filename and click OK.

The selected track elements are saved to a new file and it appears in the Tracks list.
